Baked Oatmeal for Lunch

That's right...oatmeal is not just a breakfast food! And if you can't tell by now, I'm a little bit obsessed with oatmeal. Oatmeal is a comfort food for me, especially in the winter months when it is cold outside! Let me tell you, it is cold here in Long Island. We even had snow yesterday (not a lot, but I saw some flurries when standing with the kiddies at the bus stop)! So today for lunch I decided to make Banana Baked Oatmeal with Pecans & Brown Sugar. YUM. But first, let me show you a little bit if our morning...


We started out at Dunkin Donuts of course, where I had french vanilla coffee and Jeff and Sean snacked on some donuts. Sean's doughnut of choice: chocolate munchkins. Jeff's doughnut of choice: glazed and coconut crusted glazed. Also, just a side not, have you seen the commercial for the newest menu item at Dunkins? If not, you're lucky. It's sausage bites wrapped in pancake...and it makes me gag every time it comes on the TV. Today I saw the real thing, first hand. GROSS (sorry if you like them, but there is no way those can be good or healthy). Ok, done venting :)

We then came home and played in the beautiful leaves of course!



Tuesdays are one of my favorite days of the week. Jeff doesn't have class until 11:00, so we are able to get coffee and hang for a bit!


After some fun outside, I decided to make some baked oatmeal for lunch. I have seen a lot of different recipes for baked oatmeal, but decided to work off of Kath's from Kath Eats Real Food. I pretty much followed her recipe, but added some pecans and baked it a little longer than she suggested. Thanks, Kath, for a great recipe!

Ingredients:
  • 1 banana
  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 egg, beat
  • 1 mashed banana
  • 1.5 cups of skim milk
  • 1 teaspoon vanilla

First, slice 1 banana. Next, combine the dry ingredients. Then, combine the wet ingredients (including mashed banana) and add to the dry...mix well! You can either line a pan with parchment paper or use a pie dish (as I did). Layer half of the banana on the bottom of the pan. Pour the mixture on top of the layered bananas, and top with the rest of the banana slices and pecans. Bake in the oven for about 30 minutes at 375 degrees. With 5 minutes left, take out the pie and add brown sugar to the top, then broil for the last 5 minutes!

In the oven. I was very impatient waiting for this...it looked so good and I was awfully hungry!


The finished product! This recipe is easy and healthy. If you cut the pie into 4 portions, each portion is only 275 calories-perfect for a filling breakfast (or lunch as I ate it for).


Of course I added a large spoon of peanut butter to my plate before enjoying it! I'm also obsessed with peanut butter. Seriously, it is a problem. Especially when the house I nanny for has just about every kind of peanut butter you could imagine (chunky, honey, chocolate...). I went with honey peanut butter today!


Do you believe me when I say it was good? REAL good.


I have 3 servings left for Jeff and I to eat tomorrow morning for breakfast! Maybe I'll even have one tonight for "desert." Hope it is a beautiful fall day where you are, just as it is here.

Totally crazy that I was searching for a Baked Oatmeal recipe via Google, found your recipe/blog AND come to realize you know Aftan :)) Her and I worked together at THP a few years back! What a small world Cait!! Your blog is super cute :))

Yum! I eat oatmeal practically every morning, but I never thought to bake it and cut it in pie pieces like this! Adorable. Also, I add PB almost every morning too...soooo good!

Tried this recipe, but made them into muffins instead. I didn't exactly like them as muffins (I use mini muffin pans in a convection oven :3) so this weekend, I will be making them in a flat pan like you did :)
