Cookie Friday

Hi all! Every Friday I will be making some holiday treats for you all to see and hopefully make yourself. You can make so many cute and unique gifts just by baking (and it comes from the heart). I pretty much think everyone should bake at least once a week-and why not Fridays? Then you have all weekend to eat whatever you make :)

Today I made 2 treats! One was easy, and one was even easier than that. I'll start with the easiest: Holiday Pretzel Treats.


Only three, that's right...THREE ingredients. I told you it was E-A-S-Y!


You don't really need too many instructions for this recipe, so I'll let the pictures do the talking.


After they cool, eat some and/or put them in a cute snowman jar to give to someone as a cheap and easy, yet thoughtful gift!


While I was baking, this little guy was drinking orange juice out of a snowman cup we found at the grocery store earlier. Don't you wish you could be THAT excited over a cup?


I took a break in between these treats and my next batch of cookies to eat lunch. I made a quick warm chickpea, tomato, and spinach salad with some spices (won't list them all). It hit the spot and gave me lots of energy for more nannying & cookie making!


Once my belly was satisfied, I made some Mint Chocolate Chip Cookies.

The two most important ingredients: mint extract and green food coloring.


Ingredients:
  • 2 3/4 cup flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 1/2 cups white sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup butter (1 stick)
  • 1/2 teaspoon mint extract
  • 6 to 8 drops green food coloring
  • 1 egg
  • 1 cup of semisweet chocolate chips or baking chunks
First, mix the cry ingredients in a bowl. Then, add the butter, extract, egg, vanilla, and food coloring and mix everything well. Stir in the chocolate chips.

After, drop dough 2 inches apart onto an ungreased cookie sheet. Bake at 350 degrees for 8 to 10 minutes. Cool for 3 minutes, then enjoy.

Note #1: You could also just buy Better Crocker's sugar cookie mix...much easier I'm sure.
Note #2: Don't eat all of the batter before you bake them. Its dangerously good!

Jeff's favorite ice-cream is mint chocolate chip, so of course he REALLY liked these as well!


The end. Two yummy holiday treats! Jeff and I are going over to Lauren & Fritz Zietsman's tonight for a movie night and plan to eat these (hopefully not all of them though).

Tomorrow we will be crossing "Take a Train into NYC"off of our bucket list. I have never really spent the day in the city and after living here for 6 months, I'd day it is about time!

Question of the Day: What is your favorite holiday cookie to eat or make? I love ginger cookies, but these mint ones might take the number one spot!

side note- I finally got around to making one of your recipes! I made the rolled oats with bananas and nutella last weekend - it was a hit! (haha well with Aaron and I, but still) I substituted the almond milk with organic milk, but it was still delish! Keep those recipes coming- maybe in another month I'll find the time to make another ;)

Mint chocolate chip is big in my family...I think these cookies would be a hit. Definitely need to tell my mom to check these out. Also, I KNEW you were going into the city when you asked about warm hats! JEALOUS!!! Make sure you go to Bryant Park! (I'll tell you that in person in an hour)

So I am attempted this recipe last night to top off the last hours of St. Patrick's Day, and they did not turn out anything like yours did. I am a pretty decent baker and I followed your recipe exactly. I am so bummed, because I was so excited to make these. My dough was so thick. It was almost as if I did not have enough wet ingredients to mix with the dry. I was very suprised by the 1 1/2 cups sugar too. Please help with some pointers because I would love to give these another try! I love mint chocolate chip!
