Lentil & Roasted Veggie Wrap

Today is a slow day. I can't seem to WAKE UP! Hopefully after my belly settles from this lunch I will have lots of energy! I made a red lentil & veggie wrap, with whole wheat wraps that I got at Trader Joe's earlier this week-they're great. I love wraps, more than bread. Not only do they remind me of my college days where I ate a wrap at least once a day at the good ole' Student Union, but you can put anything on them! You can make them a lunch, snack, dinner, or even dessert. Today-I made a lunch and a little dessert afterward :) Take a look...

Ingredients:
  • 1/2 cup red lentils
  • 1 green pepper
  • 1 large tomato
  • oil & vinegar
  • random spices (salt, pepper, basil, etc)
  • 1/4 cup shredded cheese
  • 1 whole wheat wrap
First, I made the lentils. I used 1 cup of water for 1/2 cup of lentils, and let them simmer on the stove for about 20 minutes.


After the lentils were the consistency I wanted, I melted some shredded cheese into them to add some taste and cheeziness to my wrap.


While the lentils were cooking, I chopped up my veggies. You can really add any veggies you like-peppers & tomatoes just happen to be two of my favorites.


Once your veggies are chopped, add them to the stove top with some oil, vinegar & spices. Cover and let them simmer for about 10 minutes (or until soft).


After your lentils have cooled a bit and your veggies are done cooking, make your wrap! You can choose to eat this cold or hot, I chose warm. By the time I had made it I had to make the little guy I nanny for a grilled cheese as he requested, so mine cooled down a bit. Still good though, and beats my normal oatmeal for lunch!


After lunch I wanted more wrap! So, I cut one in half and made a peanut butter, blueberry & strawberry dessert mini wrap. It definitely hit the spot and will hopefully keep me from pouring the chocolate chip bag into my hands later ;)


Because we all know I can't go an entire day without at least one generous spoonful of peanut butter...
