Greek Salad Skewers

I apologize for the lack of posts this week! I usually have a lot of downtime while the 2 year old I nanny for naps, however his week the kindergartener that I watch was home sick. I was not happy that she was sick, however I was very thankful to have some company while the little one napped all afternoon :) We spent our mornings going to Starbucks and the library, then paining our nails bright purple and of course found time to relax while watching Cinderella and The Little Mermaid. I'd say she had a pretty fun 2 days off of school thanks to me ;) Today she helped me make these...


Need a healthy appetizer idea for Superbowl Sunday coming up? These are perfect! I didn't add cheese since I am not a huge fan, but you could also add a cube of Feta cheese to these skewers.


Easy, easy, easy and sure to be a hit at any party! Olives, tomatoes, and cucumbers. I have also made these with olives, tomatoes, and marinated mozzarella cheese-equally good.


After I made these I was craving salad...and these of course were not enough to hold me over until dinner. So we headed to Wild by Nature, one of my favorite grocery stores, and I made myself this salad:


Grilled chicken, tomatoes, red & yellow peppers, cucumbers, greens, walnuts!


With my favorite dressing: balsamic vinaigrette.


Time for a bucket list update. I don't want you all to think we gave up on our list, there is just one item that is taking us longer than planned. Can you guess which one? The 1,000 piece puzzle! We bought it last weekend and started it, but seem to give up every night after about 30 minutes of working on it. I guess we need to work on our patience :)


This is day 1.


We watched "What About Bob?" (one of my top 10 favorite movies) while working on it. Probably a poor decision since we were more focused on the movie than the puzzle pieces. We're hoping to be done soon, but can't make any promises! I have learned that puzzles are NOT my favorite way to kill time.


This weekend we are heading to Messiah (our undergraduate college) to meet up with my old roommates and I could not be more excited! We are all staying in a tiny apartment, just like the good ole' days. Pictures to come as soon as possible. We should be there around 4:00 tomorrow afternoon.

An excellent Super Bowl food!! I make one very similar, except I'm not an olive fan, so the olives aren't on ours. We served them for New Years and the plate was quickly emptied!

I looooove jigsaw puzzles. I can do a 750 without too much trouble, but those 1,000 piece puzzles do take a while. I did one once that was a view of Earth from outer space. Almost the entire puzzle was plain black pieces. I can't believe I didn't take a picture of it when it was done. I don't think I'll ever do a puzzle so difficult again!
