Turkey Pesto Sandwich

I love Saturdays. It is my favorite day of the week for a few reasons:

1. I get to go grocery shopping (this is by far one of my favorite activities).

2. I get to sleep int (we aren't able to sleep in on the weekdays because of work and on Sundays because of church).

3. We get to make a "bed" on our living room floor (As I type this post I am lounged out on the "bed" Jeff and I made on our living room floor. We like to remove our coffee table and watch movies on the floor on the weekends. The bed is usually removed by Monday but it may just stay a few days longer this week).

While at Trader Joe's this morning I picked up ingredients for a sandwich that has been in my head for a few days. I love a good sandwich, especially when it is cheap!


Ingredients:
  • 1/4 whole grain baguette
  • 2-3 slices of turkey
  • 2 slices of fresh mozzarella cheese
  • 1-2 tablespoons pesto sauce
  • lettuce
Although you probably don't need step-by-step instructions on how to make a sandwich, I'll show you anyway (since I have nothing better to do on this Saturday except lounge on this bed). Try and stick with me on this not so complicated recipe...

Start with a fresh whole grain baguette.


Spread a tablespoon (or more or less according to your liking) onto both sides of the bread.


Add a piece of lettuce.


Place two pieces of mozzarella cheese on.


Top it off with a few slices of turkey and another piece of lettuce.


This sandwich will definitely hold you over until dinner-very filling. And while some members of this household wanted so badly to be on the blog today...


...others did not wish to be photographed at all.


Hope you try out this sandwich one day! Just like the egg salad sandwich, this is a great way to change up your typical lunches.

I love anything with Pesto on it! YUM! Next time you want to make a grilled cheese sandwich, use mozzarella cheese and spread on some pesto too! It is the best grilled cheese you will ever have!
