Chicken Salad with Grapes & Pistachios

I promised to post my sister's amazing chicken salad recipe that she made for the Mother's Day brunch we had, so here it is! I made some the the night I got home since I wanted to have it for lunches all week. I will probably make this again next week, too. I tend to get really excited when I find something that I love to eat. Then I usually eat it over and over again until I get sick of it :/ For example, I did this a few weeks ago with grapefruits. I had a grapefruit every single day! Now, I can't even stand the sight of them. So, maybe I shouldn't eat this every day because this lunch is just too good to get sick of!


Ingredients:
  • 3 cups of cooked and shredded chicken breasts
  • 1 cup red seedless grapes, cut in half
  • 2 tablespoons mayonnaise
  • 1/4 cup pistachios
  • salt and pepper to taste

-First cook the chicken breasts. I put 3 small boneless chicken breasts into my crockpot and cooked them on high for 2 hours.

-Once the chicken is fully cooked, shred it.

-Place in a medium sized bowl and add the mayo, grapes and pistachios. I didn't add any salt and pepper to the large bowl and simply added it onto my portion when I enjoyed it!


I ate it without any bread, however I've also had it on a croissant before and that is another great way to enjoy it! If you want to do without the carbs though, enjoy it in a bowl or on some stalks of celery.


This is a little "fancier" than a simple chicken salad recipe, which makes it perfect to take to a lunch or brunch. Easy to make and healthy to eat :) My favorite.

While the little guy I nanny naps I am enjoying the outdoors today. As I type this, I am staring at the beautiful garden of the house I work at!


I ran 6.5 miles at the gym today. Jeff and I are truckin' along with our marathon training! We will be in full swing training mode beginning next week after Jeff's finals are over. After work I'm home to this little man. Hopefully he behaves because I have some lemon cupcakes to make for my sister-in-law's birthday dinner tomorrow night!

That looks great! I never thought to add pistachios. I make mine with poppy seeds and dried cranberries. It's delish!

Yum! Poppy seeds and cranberries sound delicious. Maybe I'll try that next week to change it up so I don't get sick of it :)
