Mother's Day Vegetable Frittata

I decided to make a last minute trip home Friday night and boy am I glad I did. Although the drive to Pennsylvania was long and horrible (especially since I was by myself because Jeff stayed home to study for finals), it was worth a weekend spent with my mom and sister. Saturday we woke up bright & early to help my sister finish her baby registry. She is almost 20 weeks pregnant! I haven't seen her in 2 weeks and when I walked into the door to her house Friday night my first response was, "YOU'RE HUGE" (note to self: do NOT say this to a pregnant gal). I didn't mean she was huge, but compared to when I saw her last she was. That peanut in her belly sure is growing :) And Mama-to-be sure was on a mission Saturday afternoon...


After watching Ellen's annual Mother's Day show last week I recommended the Go Gaga diaper bag to Laur (my sister). She loved it! As did I. When I have a baby I will most likely be getting this diaper bag as well...


After a few hours at Babys R Us, we took ourselves to Chick-fil-a for lunch. If you don't have this chain near you, I am so so sorry. It is amazing and a family favorite for sure! And, they just started serving sweet potato fries. I was in heaven.


Next stop: Ikea. I could spend hours here (as could almost anyone the store is so big and overwhelming). We went to get nursery ideas and left with not only ideas, but lots of adorable little trinkets for the baby's room!


I spent Saturday night relaxing since I had a long (5 hour) drive home today. Before driving home though, my sister and I put together a little tea party for my mom. Growing up, I had the privilege of always having my mom greet me at the door when returning home from school. She taught morning pre-school so was always able to be home by 3:00 in the afternoon. And almost every afternoon we (my mom and sister and I) enjoyed a cup of tea together and shared the ups and downs of our days at school. We thought enjoying a cup of tea together now would be a great Mother's Day gift to my mama!

My mom even has a "tea room" in her house where she can display all of the unique tea cups and pots she has collected over the years...


On the menu for brunch: fruit salad, chicken salad with grapes and nuts (with rolls), vegetable frittata and of course tons of teas to choose from!


My sister made the chicken salad and it was amazing. I am actually making some tomorrow for Jeff and I to have for lunch for the week. I'll be sure to share her recipe!


I contributed the frittata to the meal. I didn't exactly look off of a recipe and kind of just came up with my own (so I'm actually not sure if this is even a frittata ha). But, here is what I came up with.

Ingredients:
  • 10 small stalks of asparagus cut
  • 1 medium onion chopped
  • 5-6 mushrooms sliced
  • 5 eggs
  • 4 egg whites
  • 1 cup of sliced potatoes (similar to hash browns)
  • 1/2 cup sliced cheese of your choice
  • salt and pepper to taste
First, slice the potatoes and heat on the stove top with some oil until they begin to brown. While these are cooking, begin slicing your veggies.


Add the veggies to the pan of potatoes and saute until they are almost fully cooked. While these are cooking, begin scrambling the eggs and egg whites together.


NOTE: You may need more or less eggs depending on how big the pan is that you are making the frittata in. Ours was quite large, so I ended up using several eggs. Most recipes however only call for 4 eggs and 2 egg whites.

Pour the egg mixture into the pan with the vegetables and potatoes and stir so that everything is mixed together well. Heat on medium for about 5 minutes until the egg begins to set. Once you see the edges browning, place in the oven at 350 degrees for another 5 minutes or until the egg is fully cooked!


Another easy and healthy breakfast option for you all! You can add any of your favorite vegetables to it and even throw in some breakfast sausage or bacon.


Here's my plate. SO good and healthy! Usually for Mother's Day we go out to eat and I feel horribly bloated after. A healthy brunch at home was so much more enjoyable.


What a great way to celebrate my Mom and sister, the Mom-to-be!


I love and look up to these two women so much. I can only hope to be as good of a Mother one day as my mom was to Lauren and I!


I hope you all had a great Mother's day celebrating either yourself (if you are a Mom) or your Mama! It's a hard job, as I am learning from nannying, and you all deserve a day off to relax and be pampered. I hope yesterday was that day for you.

Sounds like a wonderful Mother's Day! Your pictures are all beautiful and the food spread looks great! One of my favorite places to go with my mom is IKEA... it is so fun!
