Linguine with Sausage & Spinach

Do you read A Full Measure of Happiness? If not, you should. If you do, then the title of this post might look a little familiar. The author of the above blog is a dear friend of mine. Jeff and I went for a run and since Lauren lives about 2.2 miles from us, we stopped in to say hi one night. While there, Lauren was making a dish that looked amazingly appetizing. I decided to go home and try something similar! I didn't have any broccoli rabe on hand, but did have some spinach. Both green-both taste great with pasta.


Ingredients:
-1 box of linguine (or some kind of pasta)
-1 package of Italian sausage
-1 can of diced tomatoes (with basil)
-1-2 cups of frozen spinach

Begin by cooking the sausage. Once the sausage is almost fully cooked, add the spinach and tomatoes to the pot. On a separate burner, cook the pasta while the sausage is cooking! Add the pasta with the rest and you have yourself and incredibly quick and easy dinner :) This can easily be made gluten-free with some gluten-free pasta.


Lauren and Fritz also dropped off an early Christmas present for me a few nights ago and it might be my favorite present EVER. I know, bold. They got me these bad boys...

What are they, you ask? Slippers. Microwavable slippers. Lauren and Fritz were in Bed Bath & Beyond and saw these and immediately thought of my and my blue (raynauds) toes. I am wearing them as I type this-they're wonderful! If you have cold toes, I highly suggest investing.

11 days until our marathon! AHH! We have 1 more "long" run (6 miles) on Friday and then a 3 miler and a 2 miler then 26.2. We are so ready...

That first photo is, "WOW!"
It looks super delicious! Must try this to bring to school for lunch!
I also might look into those slippers...after I find something to keep my fingers warm!
