Enchiladas

Well, we received about 6 inches of snow here yesterday. Not as much as we were expecting, but still enough to slow down our day! I love when it snows because it gives you an excuse to stay in your pajamas all day! However, for some reason we didn't. Jeff and I were sick of being stuck in the house, so we ventured to the gym. There were 3 people total there (I guess everyone else had the right idea of being lazy in their pajamas). We felt great after a quick work-out though! After the gym we headed to lunch with my sister and brother-in-law. This was unexpected so unfortunately I didn't have my camera and can't share our meals, but trust me...everything was great! After lunch we headed on a walk in the snow at a park with my sister's dogs and my parent's. Seriously, who are we? We really didn't stay inside at all today when it was the perfect day to! Oh well, at least we got to enjoy the beautiful first snow fall!

Lauren and Jeff (my sister and brother-in-law) came back to my parent's house for dinner that my mom and I made. She worked on the beans and rice while I made the pork enchiladas.

Ingredients:
  • Chicken or pork (seasoned with cumin, chili pepper, etc.)
  • Corn of flour tortillas (we use corn to be gluten-free)
  • Green enchilada sauce
  • Green salsa
  • Shredded cheese
  • Beans
  • Rice
This was before I realized that corn tortillas fall apart much easier than flour ones. After this one fell apart while rolling it, I learned from my mom to soak the tortillas in the sauce before filling them with the meat and cheese. I still like my way better though (dry tortillas), since they were a little bit mushy from all of the sauce.


Next, fill them with your choice of meat. We had tons of pork since we were planning on making Tamales with my family today and the snow ruined it :( Don't worry though-we rescheduled for Thursday so check back for LOTS of pictures and a great homemade Mexican family recipe.


Next, add your cheese! And be generous...cheese is OH SO GOOD.


Place in the oven for about 30 minutes at 350 degrees until the cheese is melted. My mom also made her famous fruit cobbler for dessert. Unfortunately we found some other yummy leftover desserts around the house and our saving this one for our trip to Mom-Mom's in NJ tomorrow!


Ta Daaaaa.....


Serve with pinto beans or black beans for the perfect meal...


And my mom's Mexican rice (except she didn't have carrots so it's not in it's perfect form). I'll have to make a batch sometime next week and post the recipe because it is amazing!


I love when there are six place settings at the table, because that means my whole family is together.


Between dinner and dessert we played with the pups a bit. This is Cooper, one of my sister's miniature schnauzers. He can jump...high!


Finally, here's a look at our dessert. My dad received some chocolate covered pretzels from someone he works with today, so of course we had to try them out. We also had some leftover brownies & magic cookie bars.


And the worst part about cooking, is the clean up :/ Thankfully, my parent's have a dishwasher which makes the process much easier unlike our apartment!

"Snowed-in" Soup

We are still at my parent's house in PA and experiencing a snow storm! We sure are glad that we are snowed in here and not in Long Island, since we would probably get very bored in our 550 square foot apartment. We decided that since it is snowing outside, it would be a perfect night for a warm bowl of soup. This was our dinner, and my mom's take on Italian Wedding Soup....

Ingredients:
  • Turkey meat
  • Breadcrumbs
  • Tortellini
  • Spinach
  • Chicken broth
  • White beans
  • Salt and pepper to taste
First, make the meat balls. Use ground turkey and add bread crumbs and salt and pepper. Form into (small) balls.


Then, brown the meatballs on the stove top.


While the meatballs are browning, cook the tortellini. Add the meatballs, tortellini, spinach and beans to the chicken broth. Heat until meat is fully cooked (about 20 minutes).


Served with salad in my mom's super cool salad bowl from Crate & Barrel...


And leftover rolls that were homemade by my Grandmother on Christmas...


Last but not least, I wanted to share the scariest face I have EVER seen my husband make (I promise he really is a nice and not scary at all guy):

Christmas in PA

After spending 3 days with Jeff's parents and siblings, we drove Christmas Eve night to PA to see my side of the family! We met my parents at a Christmas Eve service at 11:00 that night, then headed home to open pajamas and drink Dad's famous homemade hot chocolate.

We had a great Christmas breakfast made by my dad! It is a tradition to eat tamales every Christmas morning (recipe coming tomorrow).


Our pajamas given to us by my mom-this year was probably the best jammies yet! I got very soft pants from Gap and an Under Armor shirt. Jeff's were from Nautica with little boats on them.


After a relaxing morning of breakfast and cooking, we headed to my grandmother's house to celebrate with my mom's family.


How cute is my grandmom's dog? Shes fully grown-her name is Allie. And yes, she always have some kind of adorable outfit on.

After Mammy's we headed back to my parent's for desert and presents with just my small family. It was perfect :) Here are the "kids" after opening their stockings.


In all, it was a great day-but a few of us were quite exhausted by the end :)
