Busy Bees

I thought the title of the post was appropriate for us tonight. We threw together a quick but delicious dinner tonight. Jeff and I had a photo shoot where we took pictures of the happiest baby in the world this afternoon, so we didn't have much time to cook once we got home. That's why I love the grill-it's quick yet always good! I bought some chicken sausage on sale today and made a sausage, pepper and onion sandwich out of them! It filled us right up after a busy night.


The next picture I most definitely posed for. I have never actually used our grill...that is Jeff's job! I did however get some new shorts and flops from Old Navy last weekend :)


Within 15 minutes we had spicy sausage sandwiches!


Jeff had chips with him...I turned them down. Trying to get bikini ready over here!


And finally, some shots of our shoot tonight. Jacob was THE happiest baby. Usually we have to try every trick to get kids to smile, but just clapping our hands made him grin from ear to ear. To see more, check out our photography website.

Peanut Butter Oatmeal Cookies

My husband is the king of deals (online deals, that is). He may not be an extreme coupon-er, but when it comes to finding deals on the internet...he is the best! A few weeks ago he bought a ton of our favorite kind of peanut butter because Amazon had a great deal (I can't remember the exact deal and he is not here to ask or else I would share it). Since we have had over 6 jars of peanut butter sitting in our cabinet right now I decided to put some of it to use tonight. I made some cookies!


Ingredients (adapted from here):
  • 3/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 stick of butter (1/2 cup), room temperature
  • 1/2 cup honey peanut butter
  • 1/2 cup white sugar
  • 1/2 cup light brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup whole oats
-In a medium sized bowl, combine the flour, baking soda, baking powder and salt. Mix together.

-In a kitchen aid, cream together the butter, peanut butter and sugars for about 3-4 minutes or until fluffy. Add in the egg and vanilla and beat again for another minute.

-Pour the dry mixture into the wet and mix well. Finally, add in the cup of oats and stir evenly.

-Preheat the oven to 350 degrees and bake the cookies on a greased baking sheet for about 10-12 minutes or until browned!


I try not to keep cookies around the house too often, but I have made a batch the past few Mondays because Jeff has had class until late. So, out of boredom and feeling sorry for my hubby that works so hard at school, I've been baking :)


Sometimes I feel like adding some oats makes cookies a little healthier. Silly, I know! This was a great recipe and I will definitely be using it again. Not as great as my whole-wheat chocolate chip cookies, but still good. I'm off to snug my pup and watch the Bachelorette. Waiting for my hubby to get home from class to enjoy the dinner I smell cooking in the crock-pot right now! Hopefully he arrives home soon...or else I may have to start without him ;)

Hounds on the Sound

Man, I feel like blogging has definitely taken a back seat in my life recently. I'm not sure why. I guess since Jeff and I have been busy with our photography business as well as planning my sister's baby shower this summer! I would love to promise a new recipe this week, but I'm not positive that will happen. I hope it will though. For now, I'll share with you our Sunday. We started out our day with marathon training-5 miles. Training is going well! We are running 3-4 miles two days during the week and then our long runs on the weekend. Next week will be 6 miles...and so on and so on. After our run, we showered and headed downtown for "Hounds on the Sound," a dog walk to benefit a local animal shelter! Ollie had a blast meeting so many other pups. He obviously had a hard time focusing on anything else...

After an hour or so downtown, we dropped Ollie off at home to sleep and we headed to Chipotle! We used to eat there almost every week a few months ago, but started getting sick of it. We haven't had it in months and it tasted so much better after not having it for a while.

Such a great day! I spent the rest of the night with my dear friend, Lauren, working on a sewing project for my sister's baby shower this summer :) My parents bought me a sewing machine for my birthday last month and this was the first time I used it. I still have a lot to learn...but had a lot of fun trying to be crafty!
