Pizza Bites

I told you I was back :) It feels good to be back in my kitchen-even if it is entirely too small and my oven is almost completely broken. I've recently become addicted to pinterest (visit the link if you want to see my boards). I have seen tons of great recipes on there and finally decided to actually "do" my pins instead of simply looking at them.


Ingredients (adapted from here):
  • pizza dough
  • mozzarella cheese
  • pepperoni
  • Italian seasoning
  • garlic powder
  • olive oil
-First, make your dough. Using my favorite recipe for pizza dough, I made a small batch for the dough of these bites. If you don't want this recipe to take so long you could buy already made dough at your local grocery store! However I have off today and Jeff is at class for 8 hours, so I had all the time in the world to cook these bad boys :)


-Once dough has risen for about 2 hours, begin forming small balls of equal size. Place your mozzarella cheese and pepperoni in the center of each piece of dough. I found some mozzarella/pepperoni in one which made this process so much easier (and prettier).


-Cover the cheese and pepperoni with all 4 sides of the dough until you can't see anything but dough. It should look like a ball.


I had an onlooker the entire time! Ollie was hoping I would drop something. I may or may not have "accidentally" dropped a few pieces of cheese (shh, don't tell Jeff. He hates when I feed him "people food" treats!)


-Once the bites are finished being assembled, place them in a greased pie pan, next to one another. Brush the bites with olive oil and top with Italian seasoning, garlic powder and a bit of Parmesan cheese.


-Bake in the oven for 20 minutes at 400 degrees, or until they are browned. I probably filled mine with a bit too much cheese considering it oozed out all of the bottom of the pie pan :/ The pan is currently sitting in the sink soaking and I am hoping it will be an easy clean after a few hours of soaking!


These are a great appetizer for a party! I'm sure kids would love them too. Jeff is at class now but knows these are waiting for him at home :) I'm off to edit some pictures and wait for my hubby to get here. Enjoy your night!

Summer Recap

Well, it's back to reality and that means back to blogging! As you already know, we have had a very busy summer and therefore took a few weeks (ok months) off of the blog. I never wanted it to feel like a burden and the break was nice. But I'm back in action! So, what have we been doing all of these weeks?

We spent a weekend in OCNJ visiting friends and family...

We spent an entire week on family vacation on the Chesapeake Bay! It was so relaxing and beautiful.


We took pictures for my favorite family: the Weldons. If you have been reading then you already know their story. If not please take a few minutes to read Angie's blog :)


I mean, really, could they be any cuter? I just love everything about this family!


Ollie went to the dog park for the first time and learned how to swim! He hates getting a bath so we never thought he would enjoy swimming. But this pup jumped right in. This picture is currently our background for our computer and I smile every time I see it :)


We saw old friends from college and explored an old train tunnel...


This was one of the coolest things I've ever done/seen! My friend Brandon (pictured above) lives in an old train station. His parents are interior designers and re-did the entire house, and it really should be on MTV cribs. We spent the day with Brandon and his wife, Marta exploring the train tunnel.


My best friend and college roommate got engaged and we were there to capture it all! So special...


That is only some of our last month! As you can see, we were very busy traveling from place to place but I wouldn't have had it any other way. We're back in Long Island now. Several of our neighbors are without electric because of hurricane Irene, so we are very thankful to have power! Jeff started clinical today (his last year-yippeee) and I start back to work in a few days. Hope you had as great of a summer as we did :) Looking forward to getting back into the world of blogging with you all.

My Sister's Baby Shower

Where has the time gone? I can't believe that my sister is now over 7 months pregnant and in a few short weeks her baby boy will be here! I have been busy this summer helping her prepare for her little one, and one of the ways I have done this is by throwing her a shower with my mom. This past weekend we celebrated Laur, my sister, and the little one inside her adorable belly. Before I show you some pictures from her shower, I'll show you a few of her maternity shots we took 2 weeks ago.




They think the name is going to start with a "w." Any guesses?



We took a few of her on the dock of our vacation house and then a few of her and her hubby at a nearby park!
We had her shower at a nearby restaurant, The Cedar Hollow Inn. We usually host showers at my mom's house but wanted something a bit classier this time! It was the perfect place. Not only was the room great, but the food was awesome.


I made all of the decorations for the shower! Before we knew the name of her baby boy we called him "the peanut." So, my mom and I decided to decorate using peanuts.


I also made little "trees" with leaves made of paper that matched her nursery colors (orange, blue and grey).


We also set up a little craft station instead of playing games during the shower. My mom and I found white letters of the alphabet and had each guest decorate a letter with fabric, buttons and paper that matched her colors as well. We are then going to hang them above the baby's crib in the nursery!




My sister's best friend, Aftan, made this adorable onesies which have each month of the first year on them. Perfect for photoshoots with baby boy Bryant! If you are interested in buying any, check out her etsy shop!



Last but not least, here are some of the cupcake toppers I made. I had so much fun making these decorations and even more fun celebrating my sister, who is soon going to be a wonderful mama!
