Tater Tot Egg Casserole
I should have titled this post "sleepover casserole" since that is how my sister and I always referred to this breakfast my mom used to make us. It is an easy casserole that everyone loves, so my mom always made it whenever we had friends sleepover. I am still making it for sleepovers of my own :) I made this a few weekends ago for Nikki's bachelorette party.
Ingredients:
-1 package tater tots
-1/3 cup melted butter
-1/2 lb sausage
-3/4 cup milk
-4-5 eggs
-1 tablespoon worchester sauce
-1 tablespoon cornstarch
-1/2 lb velveeta cheese
First, bake the tater tots with melted butter at 350 degrees for 10 minutes. Brown 1/2 lb of sausage. Mix together 3/4 cup milk, 4-5 eggs, 1 tablespoon worchester sauce and 1 tablespoon of cornstarch. Put the tater tots in a baking dish and spread the sausage (cut up) evenly over tater tots. Then, pour the egg mixture over all. Cube the velveeta cheese and sprinkle evenly over casserole. Bake at 350 degrees for 30-40 minutes or until cheese is melted and the casserole is brown around edges!
He seemed to enjoy it :)

i have great memories waking up to this casserole growing up! I specifically remember the first time i had it, it was at your house in coatesville, we always slept on the blue sofa in the basement and would wake up to your mom walking around on the creaky kitchen floor upstairs :)
Oh dear Aft, I had no idea that the floor "creaked" and woke you up...haha! I LOVED having all the girls sleepover :) I miss those days!!

Breakfast casseroles always remind me of my mom, she used to make them for holiday brunches... I'll have to forward her this one :)

Mehan-Thanks! I wrap the hair around the curling iron and hold it there for a few seconds instead of clasping it. I use a small curling iron as well :)

I'm french (so sorry for my very bad english), I live in south of France and I read your famous recipes everyday. I love it ! (I try to cook like you but it's not easy because we dont have the same stores here in france, it's hard to find peanut butter/ velveeta cheese (I didnt' even known this before ...) or tatertote ! but it's quite cool !!)

Now this sounds good! I have never seen this recipe before but it would be a huge hit in my house. My kids would flip out over it as they love sausage and tater tots and anything cheesy. So happy to have found your blog!
