Bruschetta Chicken
I started back at work today! Although not really considering I have off Friday and Monday. I had all 3 kids since their school is still out of power. We had a fun day starting out with breakfast at the diner, a stroll near a pond, library and finally a park! You have to find lots of things to do when the house is without power. I came home and wanted to make another recipe I found on pinterest, bruschetta chicken. It's super easy (only 4 ingredients) yet very sophisticated at the same time...
-Grill the chicken.
-Once one side is completely grilled and the second is almost, add the toppings.
-Allow the cheese to melt and then you're done!
-You could also marinate this in a sun-dried tomato type dressing before hand for some extra flavor. We are on a tight budget over here and I didn't want to buy a whole thing of dressing that we would probably never use again so we just flavored it with some salt and pepper after :)
We paired the chicken with some leftover potatoes and veggies from last night. And for dessert, goji berries! I haven't had these in so long and really need to start eating them again. They are so so good for you.
Also, I'll give you a little update on our marathon training. It is going well! For the most part we are right on track with our training schedule, however have been slacking the past week a bit. We did a short run tonight (3 miles) and have our long run (we are up to 13 miles) on Saturday. We really can't believe we are running a half marathon just for fun! Hopefully all goes well, however our legs have become super tired and sore around mile 10 recently on long runs.

We're pumped about our 4 day weekend. Tomorrow we are sleeping in (not running) and going to the movies! Be back sometime this weekend :)

What movie are you going to see?
Kathy-It's hard to describe what Goji berries taste like-they're not that sweet actually. I wouldn't say they taste as good as strawberries, but they are worth eating for the health benefits :)I've only seen them at Whole Foods. Do you have one near you?
We're going to see "Crazy, Stupid Love." Seen it?
