Key Lime Pie for Dad

This week was my Dad's birthday and since we live in NY and they are in PA, we unfortunately couldn't celebrate with the rest of my family :( However, as I type this my mom and dad are on route to Long Island to visit for the weekend! So, Jeff and I got to work making my dad his favorite dessert for his birthday-key lime pie. And since we are all attempting to eat healthy these days, we decided to make miniature pies for each of us.


Ingredients (makes 6 mini pies):
  • 7-8 limes
  • 1/3 cup lime juice
  • 1 tablespoon lime zest
  • 2 eggs
  • 1 can (14 oz) sweetened condensed milk
  • 6 mini graham cracker crusts (already made)
  • whipped cream for topping
First, preheat the oven to 350 degrees. Begin by beating the eggs until thick and yellow. Mix in the condensed milk and beat again for about 2 minutes on low until thick and creamy. Add the 1/3 cup of lime juice and 1 tablespoon of lime zest and mix again for about 30 seconds. Finally, add a drop or two of green food coloring if you wish your pies to look a bit more green! Pour the filling into the ready-made crusts and bake for 15 minutes. Cool for about an hour then refrigerate before serving. Top with whipped cream and a slice of lime!

Ta Daaaa....


Even though we aren't celebrating until tonight, Jeff and I had a taste of one and they are mighty good! Can't wait to have my own mini pie later tonight.

Ollie isn't too much help when it comes to blogging. He usually gets in the way, wanting to see what all of the "fuss" is about. But he is just too stinkin' cute to get mad at :) Isn't he?


My parent's should be here any minute, so we are off to greet them! We will be spending the day in downtown Port Jefferson with Ollie, socializing him with the rest of the world. Updates later tonight or tomorrow on our day :) Hope you are all having a wonderful Saturday.

Just catching up on your new posts! Here's my all-time favorite key lime pie ever! You really should try it one day :) It's frozen, with frozen whipped cream on top, and slices of lime for garnish.....so fun! And the best one I"ve ever tried! :) You'll have to make it for Bobby & have him vote on his favorite! Your mini ones are so cute though!!!!!!!!

My whole family thought that was the most bizarre request ever, but then realized how tasty it truly is! I did it. I made these tonight and they were a HIT! I had to adapt the recipe slightly because I didn't have time to stock up on little pie crusts beforehand. I used muffin pans to make my mini portions instead. Paper liner, 1 tbsp. graham cracker crust (recipe from the box) patted down in the bottom of each liner. Baked crust 5 minutes and then added filling and baked 10 minutes more. It made about 18 individual "pies". They were so nummy that none of them survived. Thanks for the inspiration!
