Sausage & Veggie Scrambled Egg Muffins
Hi everyone! If you have been reading the blog for a while, then you will recognize this recipe (if not, then here is a new one for you). Since I shot pictures of these before I bought my Canon camera, I wanted to re-shoot these "muffins" that we make often. They are one of Jeff's favorite breakfast recipes!
Ingredients:
- 9-12 eggs
- 1/2 pound breakfast sausage (organic and gluten-free)
- 1/2 cup chopped onion
- 1/4 cup chopped pepper
- 1/2 cup shredded cheese (I used a Mexican blend)
- salt and pepper to taste
-While this is cooking, beat the eggs in a medium sized bowl.
- Once the eggs are beat, add in the peppers and onion.
-After the sausage is cooked, cut it into small pieces and add along with the cheese to the egg mixture.
-Finally, spray a muffin pan with cooking spray and fill 1/3 with the egg mixture. Bake at 350 degrees for 20-25 minutes or until the egg is fully cooked. Easy, good, and most of all...super cute! These are perfect if you are hosting a brunch or need to take something to a party.
My sister eats gluten-free and makes these often when she needs to bring something to a breakfast or brunch. You can add any of your favorite veggies to them, we just chose peppers.
I was hoping to cross off "don't buy anything materialistic for 2 months" from the Bucket List today. Since Ollie has cost us more than we anticipated, I haven't even been able to think about buying new spring clothes or fun jewelry (sad). Just as I was about to write and tell all of you that I haven't bought anything new in 2 months, I realized I would be lying! Last weekend I bought a bathing suit at Old Navy that I love. Want to see? Yes it is a one-piece. I don't think I have worn a one-piece (except for working out) since I was a little girl. But this suit was too cute to pass up!
It looks a little different than this picture shows (more of a light gray color). I can remember in high school it was so "nerdy" to wear anything but a skanky two-piece bathing suit. Well, guess what? I'm bringing one-pieces back into style! Won't you join me?
I am looking out the window and what do I see? Snow. Last Friday's 70 degree weather was such a tease! I guess it is a perfect night for soup :) Which is exactly what I am making! Our friends Lauren & Fritz will be over for soup and some fresh bread from Panera later. Hope it is warmer where you are than it is here!

Two Pieces are over-rated:) Although I switch back and forth, I like my one piece or my skirted tankini...you can do so much more without all your girly parts shakin around! lol!

i have a challenge for you. i am having a hard time finding things that i can cook that are vegan or vegetarian that my kids can eat. a lot of it is spicy or ethnic. they are big on veggies...but can you think of anything that i can make them that is not pb & j and mac & cheese? i find that i am cooking for matt and i and then making them something else....which i hate doing. i didn't start doing it until we started following a higher vegetarian diet. do you have any suggestions....or yummy recipes?

Love this challenge! This weekend I will work on thinking of some kid-friendly vegetarian dishes. Until then though, this is one of my favorite blogs. Those look so good~ I'm not a fan of sausage, so if I make them, I'll probably omit the sausage and add lots of veggies (without overdoing it like I always do!)

I came across your blog by accident and I absolutely love it! I love all your ideas and I am a vegetarian so most all your recipes give me new twists and new ideas :) Plus, love the bathing suit! I also got this classy 50's style one piece from Victoria's Secret last summer and LOVE IT way more than any two piece I have! High Five sister ;)
