Corn Muffins
Is it weird that I love corn muffins for breakfast? I used to work as a cart girl on a golf course and ate one almost every morning there! I realized this week that I had never made corn bread (except from the box) so decided to try. Using Ina Garten's recipe, I knew I couldn't go wrong. Ina always helps me out.
Ingredients (adapted from here):- 3 cups all-purpose flour
- 1 cup sugar
- 1 cup medium cornmeal
- 2 tablespoons baking powder
- 1 1/2 teaspoons salt
- 1 1/2 cups 1 % milk
- 1/2 pound unsalted butter
- 2 large eggs
- 1/2 cup frozen corn kernels
-Preheat the oven to 350 degrees F.
Line 12 muffin cups with paper liners or spray well with non-stick cooking spray.
-Mix the flour, sugar, cornmeal, baking powder, and salt.
-In a separate bowl, combine the milk, melted butter, and eggs. With the mixer on the lowest speed, pour the wet ingredients into the dry ones and stir until they are just blended.
-Finally, add in the thawed corn kernels and mix well.-Spoon the batter into the paper liners, filling each one to the top. For mini muffins, bake for about 9-11 minutes. For large muffins, bake for about 25 minutes or until brown.
I love mini muffins. I love love love carbs and always feel better having a smaller portion to grab instead of a larger one (even though I usually eat too many anyway). Jeff had a few with dinner last night and I had some for breakfast! I'm sure they will all be gone by tomorrow :/
I also wanted to share some pictures of my day today. Sean and I had "farm class" today! I love Wednesdays because we get to hold baby bunnies and chicks and even milk goats. If only it was a cow...then I could have crossed it off of our bucket list!
He was the first one to volunteer to milk the goat:) And of course, as seen above with the sheep, he made friends with everyone on the farm...including animals. I love my job (most days).

I love corn muffins, too...especially if they are moist...with butter and honey!!! I love the addition of real corn.
