Lemon Cupcakes with Lemon Frosting
I had hoped to blog later tonight and share several pictures with you of the party I was planning on attending tonight but there has been a change of plans. I'm sick. And miserable. Jeff has been sick for a few days and I guess he passed it along to me. You really do share everything (the good and bad) when you are married! I made these cupcakes last night for a dinner party we were having for my sister-in-laws birthday/Mother's Day celebration. I'm still hoping Jeff can drive them over to the party since I would hate for them to go to waste! I also wish I could eat one, however I have zero appetite. I tried to eat oatmeal this morning but it tasted like nothing. Don't you hate that? Anyway, hopefully you will love these...
Ingredients (recipe borrowed from here):
-Put the sugar and lemon zest in a mixer bowl or another large bowl and rub them together with your fingers until the sugar is moist and fragrant. Add the butter and, working with the paddle or whisk attachment, or with a hand mixer, beat at medium speed for a full 3 minutes, until the butter and sugar are very light.
-Beat in the extracts, then add one third of the flour mixture, still beating on medium speed.
-Beat in half of the milk-egg mixture, then beat in half of the remaining dry ingredients until incorporated.
-Add the rest of the milk and eggs, beating until the batter is homogeneous, then add the last of the dry ingredients.
-Finally, give the batter a good 2-minute beating to ensure that it is thoroughly mixed and well aerated. Place the batter into the cupcake tins.
-Bake for 18-22 minutes at 350 degrees!

I made some frosting but it didn't turn out as I hoped so I won't share the recipe! Out of frustration, I took myself to the store and bought already made lemon icing. Probably would have tasted better homemade but it avoided me having another breakdown :)
Also, how adorable are these cupcake holders? Jeff's sister, Kristina, bought them for me for Valentine's day after seeing them in a magazine. Another reason why these cupcakes need to make it to the party-so she can see these beautiful holders!
I'm off to take a bath, read my newest Rachael Ray magazine and then head to bed for the night. Hoping this sickness is gone by tomorrow morning because running after a 2 year old is hard work when I have zero energy! Any suggestions on how to quickly get rid of a head cold?

Advil Cold and Sinus takes care of the head cold...doesn't cure it but covers it up to get to work!

Just wanted to share this icing recipe with you :)
1/2 cup butter
2 tablespoons lemon juice
1/2 teaspoon vanilla extract
3 cups confectioners' sugar
Directions
1.Combine the butter, lemon juice, vanilla, and confectioner's sugar and beat until light and fluffy. Add more confectioner's sugar, or lemon juice to adjust the consistency as needed.
The cupcake holders couldn't be one ounce cuter!

Sorry you and Jeff are sick. I always take extra vitamin C when I feel a cold coming on and I gargle with warm salt water. I have to say that these two things have helped me avoid colds for years. The cupcakes like sooo pretty and yummy! Put them in the freezer and bring them over next week. Cheryl
Netti pot for head colds! Also vitamin c (either from a vitamin or from foods), warm shower/bath, and sudafed if you need it... the behind the counter stuff, not the stuff they sell in the aisles (They are different)
I made this recipe recently too! Was it the lemon cream cheese frosting you had issues with? I had to add sooooo much powdered sugar to get it to a useable consistency. I love that cake recipe though, it's so nice and moist.

Thank you everyone! I'm feeling a bit better today, but still need a day of rest before I'm back to normal I think :) Cheryl-I put the cupcakes in the freezer for next week.
