"Throw it all Together" Pasta

The dish I am sharing today is a common one in the Jensen household. When I don't have anything planned for dinner, I turn to this. I love pasta because you can do so much with it and I almost always have a bag in my pantry. Last night I didn't feel like planning a complicated meal (although my meals are never really complicated as you know) so I turned to our last bag of whole-wheat pasta sitting lonely on the shelf. I searched in the freezer for meat that could easily dethaw and found some delicious Italian sausage. Then, I opened the refrigerator and pulled out any and all veggies that would soon expire. That is how this dinner began. This is how it ended...

Yum! A delicious, healthy and filling meal. So much better than eating cereal for the second night in a row :)

Ingredients:
  • 1 bag whole wheat pasta
  • meat of your choice (we used Italian sausage but chicken works too)
  • veggies of your choice (we used broccoli, sweet potato and some onion)
  • cheese to top it off with
-First, chop up your veggies and place them in a pan with a tablespoon or two of olive oil. Roast them in the oven for about 25 minutes at 350 degrees.

-While veggies are roasting, begin cooking your sausage (or other choice of meat). I browned the sausage on the stove top for about 15 minutes on low.

-While meat is cooking, begin boiling water for pasta. Add the pasta to the boiling water and heat for 10-12 minutes (or according to package depending on what kind of pasta you use).

-Once everything is done, mix it all together and top it off with cheese and/or salt and pepper!

This makes a lot, so plan to have leftovers. Jeff can eat pasta night after night, so he is happy with the amount of leftovers. I, on the other hand, don't enjoy eating the same thing more than two nights in a row (does that make me a brat? I hope not).

Remember how much I love Fridays? So glad that day of the week is finally here! Jeff and Ollie met Sean and I downtown in Port Jefferson for some Dunkin (for Sean), Starbucks (for us) and sunshine! A great way to end the week...

The kid loves donuts.

The next one is a bit over exposed but I couldn't resist sharing. He makes me smile (most days).

Thank you for all of your encouraging comments on my post yesterday. They definitely cheered me up. Hope you all have a great & relaxing weekend!

Looks yummy!

And I'm glad that I'm not the only one that says "dethaw". I don't know if it's even a word, just seems to be combining defrost and thaw, lol. But I say it all the time!

Ha funny you mention "dethaw"! When I was writing this post, it kept telling me it wasn't a word but since my mom had always used it growing up I swore it was. Guess it isn't "technically" a word! Oh well :) At least I'm not the only one who made it up...

I love how you've combined sweet potato and broccoli! I'm a fan of pantry pasta (I recently had roasted cherry tomatoes and mushrooms with pasta, and it was delish!), so this certainly caught my eye. It's amazing how the simplest throw and there makes a great dish :)
