Dinner & A Desert
Want to see what I made for dinner last night? I thought so...
Chicken and Veggie Stir Fry with Brown Rice & a Whole Wheat Wrap.
This recipe was super easy and filling. Just pick some of your favorite veggies (I used red peppers, carrots and snow peas. Add some chicken and soy sauce. Serve over brown rice and add a wrap to make stir-fry wraps like we did! This is the soy sauce we use...highly recommended for anyone with a gluten or wheat allergy.
Since last night's dinner is over, that means today is Friday. And do you know what that means? Holiday Treat Friday!!! I missed last Friday so promised myself I wouldn't this week. I found a Peppermint Bark for 2 recipe on Tasty Kitchen and thought it sounded easy enough to make! Plus, I always have way too many desserts around the apartment so a "recipe for 2" sounded perfect.
Ingredients:
- 2/3 cup chocolate chips or hershey kisses
- 1/2 teaspoon peppermint extract
- 2/3 cup of white chocolate
- 2 crushed candy canes
- loaf pan
- parchment paper
First, line a bread loaf pan with parchment paper. Then melt the chocolate chips and/or kisses in the microwave or double boiler. Stir in 1/4 teaspoon of peppermint extract and pour the mixture into the loaf pan. Place in the fridge for about an hour until it hardens.
Next, do the same with the white chocolate. Melt it in the microwave or double boiler and add the rest of the peppermint extract. Pour it on top of the hardened chocolate. Add the pieces of candy cane to the top of the white chocolate layer. Set the entire thing in the fridge for about 30 minutes or until hardened. Cut into any size pieces and serve at room temperature!
Again, you could make this as a gift for someone or to serve as a desert for a holiday party!
We are going out to dinner tonight with our friends, Lauren & Fritz Zeitsman, and we are all very excited! Living on a budget doesn't allow us to eat out often-so this is a Christmas treat for the 4 of us :) Pictures will be up later of our night & meals of course.
