The Calm After the Storm
My post title refers to two things:
I didn't have much time to eat today, so I came home and made a yummy salad. I went to the doctor yesterday and learned that my B12 is very low (meats and leafy greens), so I decided I would eat greens for lunch and meat for dinner. There, problem solved...right? I wish, I'm also heading to CVS today to buy some supplements.
In my salad:
First-yesterday it stormed like CRAZY in Long Island! My drive home was awful, with lots of roads flooded. We woke up this morning to calmness. The beautiful sun was shining, but leaves and tree branches covered everyone's yard...
Second-I went to work today (nannying) to quickly learn that my day would not be an easy one. I walked in the door and realized the 2nd grader in the family had the stomach flu :/ I spent the morning wiping up vomit (too much information, I know) and rubbing the poor guys back. I ended up coming home early since his mom took a half day of work. It is MUCH calmer here in my tiny apartment than in a sick household...

In my salad:
- spinach
- 1 clementine
- almonds
- carrot shavings
- goji berries
- dried cranberries
- (and I topped it off with some balsamic dressing)
After my salad I whipped up a 1 minute flax muffin. I combined a bunch of recipes I found off of google to create mine. If you google "1 minute muffin," you will find TONS of recipes!
Ingredients:
Mix all of the dry ingredients in a bowl. Then, mix all of the wet and stir well. Pour the wet into the dry and mix well again. Place in a coffee mug and microwave on high for 1 minute. How easy is that? These are easy and healthy-perfect for a quick breakfast (or afternoon snack)!
Ok, so it's not as pretty as a muffin in a pan...but who cares? You just eat it anyway! I'm off to eat my muffin, clean up the house, go for a run, cook some dinner, then head to small group. Oh and take a shower in there somewhere because a. I'm probably infested with disease after this morning and b. I'll probably be sweaty after my run. Hope you're having a great day :)
Question of the Day: When do you feel most calm? I wish I could say after work for myself, but I'm often rushing to the gym then home to cook dinner. I'm thinking I may need some "me" time everyday, but when?...

- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- 1 egg
- 1 teaspoon sugar
- 1 teaspoon olive oil
- a handful of white chocolate chips, raisins, or anything else to add some taste!

can't help you on the me time thing--once you become a mom it gets 293082390238x harder ;) haha. I'm thinking your me-time is your gym time? maybe?
