"Snowed-in" Soup
We are still at my parent's house in PA and experiencing a snow storm! We sure are glad that we are snowed in here and not in Long Island, since we would probably get very bored in our 550 square foot apartment. We decided that since it is snowing outside, it would be a perfect night for a warm bowl of soup. This was our dinner, and my mom's take on Italian Wedding Soup....
Ingredients:
- Turkey meat
- Breadcrumbs
- Tortellini
- Spinach
- Chicken broth
- White beans
- Salt and pepper to taste
First, make the meat balls. Use ground turkey and add bread crumbs and salt and pepper. Form into (small) balls.
Then, brown the meatballs on the stove top.
While the meatballs are browning, cook the tortellini. Add the meatballs, tortellini, spinach and beans to the chicken broth. Heat until meat is fully cooked (about 20 minutes).
Served with salad in my mom's super cool salad bowl from Crate & Barrel...
And leftover rolls that were homemade by my Grandmother on Christmas...
Last but not least, I wanted to share the scariest face I have EVER seen my husband make (I promise he really is a nice and not scary at all guy):
