Mini Pumpkin Muffins
Why are mini muffins better than regular sized muffins?...because you can eat a lot of them without feeling as guilty! (even though you usually end up eating more than a full sized muffin). They're just more fun! I spent the morning making some mini pumpkin muffins-using my mom's famous pumpkin bread recipe. I've only made gluten-free chocolate chip pumpkin bread before, so this was somewhat new. I'm now enjoying two mini muffins with a cup of tea as I write this!
Ingredients:
(Note: this recipe makes 2 loafs of bread-so if you only want a few muffins I would cut it in half or even more,)
- 3 cups flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1 teaspoon cloves
- 1/2 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 cup oil
- 4 eggs
- 3 cups sugar
- 2/3 cup water
- 2 cans pumpkin
First, mix the dry ingredients together. Then add the rest of the ingredients except the canned pumpkin. Once everything is mixed well, add in the two cans of pumpkin and mix again! Grease the muffin or loaf pan and bake at 350 degrees. For mini muffins, bake for 10-12 minutes. For regular sized muffins, bake for 18-21 minutes. For a large loaf of bread, bake for 1 hour and 15 minutes (checking regularly in case it is done earlier). Remember...all ovens are different!
Let them cool for a few minutes before serving!
These are super yummy and best eaten warm. If you have kids-mini muffins are great! I gave two to Sean for a snack...which are a little healthier than cookies I guess?

If you have a few extra minutes today, I highly suggest making these. I'm still not feeling 100% after being sick this weekend, so I'm going to relax and watch some TV while I wait for the bus to drop off the older kiddos. Then I'm heading home to hit the gym with the hubby, home for dinner, then watching Jeff's rec volleyball team win a playoff game ;)

Hey Cait :) I bought a jar of 26 oz pumpkin, and can only store it for 1 week in the fridge so I'm looking through all my pumpkin recipes and trying them ASAP. How many muffins did you get? I tend to overeat on things like this so I only want a few...
