Oatmeal Breakfast Cake
Last time I made these breakfast bars, Jeff loved them! It was a great breakfast on-the-go for his early morning classes. Lauren from Little Yellow Kitchen commented on the recipe of the last breakfast bar recommending a different yet similar one, with no flour at all in them. I decided this rainy morning was a perfect one to bake cake for breakfast. This recipe isn't vegan but it is still healthy-with no granulated sugar, oil or butter! I borrowed this recipe from Gingerbread Bagels but instead of making them bars, baked them in cake form :) Cake for breakfast, my favorite.

Ingredients (recipe borrowed from here):
-Add in the vanilla extract, milk and egg. Mix well.
-Finally add in the mashed banana and peanut butter and mix thoroughly.
-Set your oven to 350 degrees and grease any pan of your choice (about 8 in. by 8 in). Bake for 20 minutes and allow to cool before enjoying!

- 1 1/2 cups quick cooking oats (I actually didn't use quick cooking)
- 1/4 cup packed light brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon of cinnamon
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1 large egg, lightly beaten
- 1 large mashed banana
- 1/4 cup creamy peanut butter
-Add in the vanilla extract, milk and egg. Mix well.
-Finally add in the mashed banana and peanut butter and mix thoroughly.

I thought this tasted similar to the baked oatmeal I made this past fall. This recipe is another great one if you need to bring something to a breakfast or brunch!

I was quite frustrated with these pictures because of the horrible shadows, but decided to post them anyway. Sometimes I am too hard on myself when it comes to pictures, but I am learning to just "go with the flow" on days when lighting might not be the best!

Why not top your piece of "cake" with more peanut butter? ;) I'll leave you with one last picture of Ollie and I. Jeff took this of us snugging last night while watching Extreme Couponing (which I love, but could never do-those women do not mess around when it comes to coupons). Ollie is getting so big! He even started losing his baby teeth this week.

It is raining now but hopefully it stops since Jeff and I have plans to go to a BBQ someone from his class is having! Quick question, are you getting up at 4 or 5 am to watch the Royal Wedding? I haven't decided if I am or not...but I am leaning towards yes...

Looks good! I'm not watching the wedding... I value my sleep so much more!
We just made them together. I did them in muffin tins and they came out great. And as a plus I can 'frost' them with peanut butter! B helped mix, and said they smell good, but I'll have to make then 2 or 3 times before he will try them. He's not one to jump into trying anything new right away.
Btw...are you on twitter? I keep meaning to ask and forget.
Hey cait, I stumbled across your blog recently and your absolutely adorable! I'm new to cooking/baking and I'm thinking of giving these a try. Is the texture soft and chewy, or crispy?

Hi Cait, I tried this recipe today--it tastes great! The only thing is, I used soy milk since I didn't have regular on hand, and the texture came out a little wetter than I expected. It's a bit more like actual cake and not too chewy. Do you think the soy milk would affect the texture?
That looks really good. Approximately how many servings do you think I could pull from this? Because I always end up eating an entirely different breakfast than my family (I have 50+ recipes on bookmark!) and would just like to divide it into a single serving. Love your blog, by the way. Soo glad that I stumbled upon it on FoodBuzz!!
