Shrimp on the Barbie
I promised a grill recipe last night, however Jeff's school schedule didn't allow that to happen. Unfortunately he has classes until 8 on Mondays and Wednesdays so I'll probably just stick to cereal or hummus and veggies for dinner on my own the next few months! Tonight though, we were able to put together a fun dinner to share with you all :) Shish Kabobs!
Ingredients:
- 1/2 zucchini
- 1/2 yellow squash
- 1/2 sweet onion
- 8 large shrimp
- 1-2 chicken breasts
- 10 small tomatoes
- 1 ear of corn
Simply cut all of your ingredients up into sizes you like then place on a wooden kabob stick. Grill for a few minutes on each side! Enjoy them with your favorite bbq sauce :) We also had some grilled potatoes on the side. My mom and dad often have these when we are home so we started making them with almost every meal we grill.
Microwave the potato for about 3-5 minutes before cutting into 4 long wedges. Spray with butter spray (or I can't believe it's not butter spray) and sprinkle some Lawry's salt on too.
While Jeff was master grilling...
I was busy yelling at our ornery pup! He kept eating bugs, digging holes and would not just sit still. We always have to remind ourselves that he is just a baby...still learning how to live life. Thankfully, he has us to teach him how :)
After a few short minutes we had a great dinner to enjoy together. We ate outside on our adorable table that Jeff's mom bought for us last year after our wedding. It's the perfect size for the two of us!
Here's my favorite gluten-free bone suckin' sauce sauce (bought at Whole Foods)...
Ta daaa....
This is a healthy, quick and fun dinner. It's definitely something different to change up the typical "meat and potatoes" every night. It's also fun to have when company is over. We made these one time at our friend Lauren and Fritz's house and each person made their own unique kabobs. What kinds of meat/veggies do you normally put on your kabobs? We love new ideas!

we love seasoning our kebabs with teryiaki sauce... also we love putting peppers onion and pineapple with pork or chicken. yum yum
Eggplant is amazing grilled with chicken and tomatoes, and apples are great with potato and pork!

Not a big fan of shish ka bobs just because they fall off we cook them unevenly and end up being mad at them...but I want to try those yummy potatoes!!!
I love shish kabobs, mostly because we only have them, at the most, 3 times a year, or even never!
Ohsheglows has a new recipe for bbq sauce, by the way~ ^^
How long do you cook the shish-ka-bobs? I love all the things you put on there. Also I see a few chicken breasts on the grill but do you also have them threaded on the ka-bobs?
