Black Bean Veggie Burgers

Today was rough. Not only was I extremely sore from yesterday's work out, but I had a very grump 2 year old. Good thing that tonight is better...I am home, sitting on the couch with my husband, about to play a game of Egyptian Rat Screw!

Before we start a competitive game though, I'll share with you what I made for dinner tonight-Black Bean Veggie Burgers! Not to brag, but they were probably one of the best recipes I have made. Sometimes I try these "different" recipes, and they not only don't look like they should, but also don't taste like they should. But these...these looked & tasted quite good!


Just a little advertisement here...these are my favorite gluten-free bread crumbs. If you see "Schar"...its usually always good! Some of my favorites are their chocolate cookies, bread sticks, and table crackers.


Ingredients:
  • 1 can black beans, drained and rinsed
  • 1/4 cup of oats
  • 1/2 cup of gluten-free bread crumbs
  • 1 tablespoon cumin
  • 1 pepper chopped
  • 1 onion chopped
  • 1 tablespoon garlic
  • corn & bean salsa
  • 1 egg
After draining and rinsing the black beans, blend in a blender or a food processor. Then...mix everything in a bowl except for the oats and bread crumbs. Finally, add the oats and bread crumbs (add more if needed for patties to stick together). Form 4 patties and light your grill up! Grill the patties for about 8 minutes on each side, or until brown. Add cheese if you want (we did).

Jeff's response to this: "It looks like poop with corn in it" (sorry if that grossed you out).


Meet our grill. My parent's bought this for us our wedding present and we could not be more thankful! It is especially great in the summer, and makes for an easy clean-up. Another plus is that it is located right outside of our kitchen window...so I make Jeff stand out there with the food and then just hand him things through the window :) Jeff is a master griller. And I love him.

Ta Daa...a healthy, meat-free, very yummy burger. I obviously had to eat mine without a bun since gluten-free buns cost about 9 dollars each (ok not really, but almost)...but it was still great with a piece of melted cheese on top!


We topped off our dinner with a salad and some Parmesan Risotto...so creamy! I added my favorite, Goji Berries to add some flavor to my salad.



A perfect, filling dinner after our 3.5 mile run together! We each didn't want to run since we were sore, and we waited so long that it was almost dark by the time we started...but we forced ourselves. Afterward, we were both glad we did :) Here is me before though, cold and not wanting to move my legs...especially for 30 minutes...
